自分たちの農業を模索するなか出会った“ゆり根”が 野菜ソムリエサミットで最高金賞を受賞

帯広の川西地区で代々畑作農業を営む五十嵐農園。五十嵐 英憲さんは4代目として小麦、ビート、豆類を生産しながら、妻の詔子さんとともに「何か自分たちらしい農業もできないか」と模索するなか2020年に出会った作物が”ゆり根”でした。

“ゆり根”はデリケートで病気にかかりやすく、種を植えてから収穫までに4年~6年もの年月がかかるため、その特性を知り尽くした生産者でなければ育てることができません。五十嵐さんご夫妻は「帯広市川西百合根生産組合」に加入し、先輩たちから様々なことを教わりながら、長い時間をかけて、大切に“ゆり根”の栽培を続けました。

Igarashi Farm is a family operation in the Kawanishi district of Obihiro that has cultivated fields for generations. As the fourth-generation farmer, Hidenori Igarashi produces wheat, sugar beets, and beans. Alongside his wife, Shoko, they searched for a farming approach that felt uniquely their own. In 2020, they discovered a crop that fit that vision perfectly: yurine lily bulbs.

 Yurine lily bulbs are delicate and prone to disease, requiring four to six years from planting to harvest. Only producers who thoroughly understand these characteristics can successfully cultivate them. The Igarashis joined the Obihiro City Kawanishi Yurine Production Association, learning various techniques from more experienced growers. Through years of dedicated effort, they have continued to cultivate yurine lily bulbs with great care.

通常10月~11月に収穫する“ゆり根”を、五十嵐農園では8月から収穫をはじめ、2~6ヶ月じっくり低温熟成しさらに甘みを引き出すといいます。そして初出荷の2024年、詔子さんが立ち上げた五十嵐農園の野菜ブランド“FARM TORETA”の「幻のゆり根 月光」が日本野菜ソムリエ協会の品評会「野菜ソムリエサミット」で最高位の最高金賞を受賞。まるでフルーツのように甘いと、審査員たちからは驚きの声もあがりました。

「十勝は寒暖差があり野菜の美味しさを引き出してくれる土地。十勝を訪れる人たちに美味しい“ゆり根”をいつでも食べてもらえるよう、今後は通年出荷を目指しています。また、農業の楽しさも一緒に発信していきたいです!」と五十嵐さんご夫妻は笑顔で話してくれました。

While yurine lily bulbs are normally harvested from October to November, Igarashi Farm begins harvesting them in August. They are then carefully cold-aged for 2 to 6 months to further enhance their sweetness. The “Maboroshi no Yurine Lily Bulb: Gekko” from Igarashi Farm’s vegetable brand FARM TORETA, launched by Noriko, won the highest honor, the Grand Gold Award, at the Japan Vegetable Sommelier Association’s Vegetable Sommelier Summit competition in 2024, its first year of shipment. Judges expressed astonishment, remarking it was as sweet as fruit.

The Igarashis smiled as they shared their vision, saying, “Tokachi’s climate, with its significant temperature variations, is a land that draws out the true depth of flavor in vegetables. To ensure visitors to Tokachi can enjoy great tasing yurine lily bulbs anytime, we’re aiming for year-round shipments going forward. We also want to share the joy of farming with everyone!”

【幻のゆり根 月光】

糖度約24度の驚くほど甘いゆり根。十勝の厳しい冬を幾度も超えて出来たゆり根を、2~6ヶ月低温熟成させさらに甘みと滑らかさを引き出しました。「月光」は日本では幕別町忠類地区と帯広市川西地区の数件でしか栽培されていない希少な品種で、茹でたゆり根に塩昆布を合えたシンプルな調理や、ゆり根ごはんにして食べるのもおすすめ。

【Maboroshi no Yurine Lily Bulb: Gekko】

Yurine lily bulbs boast an astonishing sweetness with a sugar content of approximately 24 degrees Brix. These bulbs, cultivated through Tokachi’s harsh winters, undergo 2 to 6 months of cold-storage aging to further enhance their sweetness and smooth texture. “Gekko” is a rare variety grown only by a few select farms in the Churui district of Makubetsu and the Kawanishi district of Obihiro in Japan. Enjoy them simply boiled and mixed with salted kelp, or try them with some rice.
