国内自給率1%未満といわれる希少な羊肉。そのうち北海道は全国の羊肉生産の4分の3を占めており、十勝でも広大な敷地や風土を生かし健康的に羊たちが飼育されています。十勝を代表する羊牧場のひとつが足寄町にある石田めん羊牧場です。ともに道外出身の石田さんご夫妻は、帯広畜産大学を卒業。十勝の晴れた日が多い気候やメリハリのある肉質を作る寒暖差に魅了され「ここなら自分たちの思う羊が育てられる」と、2001年に20頭の羊と2haの土地で新規就農したという。今では55haの広大な土地で900頭もの羊を育てています。

Raising sheep not by human standards,but with a commitment to adapting to their needs

The percentage of Japan’s domestic self-sufficiency rate for lamb is said to be less than 1%. Of this, Hokkaido accounts for three-quarters of the nation’s lamb production. In Tokachi, sheep are raised in a healthy manner, utilizing the vast land and climate. One of Tokachi’s leading sheep farms is the Ishida Sheep Farm in Ashoro. The Ishidas, both originally from outside Hokkaido, graduated from Obihiro University of Agriculture and Veterinary Medicine. Captivated by Tokachi’s climate with its many sunny days and the temperature fluctuations that produce well-marbled meat, they decided that this is the place to raise the sheep they envisioned. They started farming in 2001 with 20 sheep and 2 hectares of land. Today, they raise 900 sheep on a vast 55-hectare property.

食用の羊としてよく知られるのは「サフォーク種」という羊ですが、石田めん羊牧場では羊肉の王様と称される「サウスダウン種」を中心に飼育しています。「サウスダウン種」を選んだのは、自分たちが本当に美味しいと感じたものを届けていきたいという理由から。人の基準に合わせず、いかに羊に合わせてあげるか、とういことにもこだわりながら育てています。出荷の時期も月齢では決めずに、それぞれの個体に向き合い一番美味しいと思うタイミングで出荷。石田めん羊牧場の羊肉は繊細な肉質と豊かな風味、雑味が少なくしっかりした旨味が特徴。羊本来の美味しさをしっかりと味わうことができます。石田さんが信頼を置く帯広市内の飲食店で石田めん羊牧場の羊肉が楽しめるので、ぜひ足を運んでみて。

The Suffolk sheep is well known as a meat breed, but at Ishida Sheep Farm, they primarily raise the Southdown sheep, often called the king of lamb. They chose the Southdown because they wanted to provide what they personally found truly delicious. They raise them with a strong focus on adapting to the sheep’s needs, rather than forcing them to conform to human standards. Instead of basing shipping dates on the lunar calendar, they focus on each individual sheep, shipping them when they believe the meat is at its peak flavor.
